    Chef Don Reinheardt's Pimento Cheese

    Affectionately known as "the caviar of the South," this pimento cheese recipe is from Hilton Head Island's finest.

    Ingredients:
    4 large pimento peppers, roasted, peeled, seeded and diced*
    2 jalapeños, roasted, peeled, seeded and diced*
    4 oz. cream cheese, room temperature
    1/2 cup of mayonnaise
    1/2 tsp. Frank’s hot sauce
    1/2 tsp. kosher salt
    1/2 tsp. sugar
    1⁄8 tsp. cayenne pepper
    1⁄8 tsp. ground white pepper
    1⁄8 tsp. smoke paprika
    1/4 cup chopped pickles with brine
    1 lb. extra sharp cheddar cheese (Tillamook suggested)**

    Directions:
    Grate entire pound of cheese on the large holes of a box grater into a large bowl. Add the rest of the ingredients and fold in until completely mixed. Cover the bowl and chill until serving.

    Notes:
    *Pimento peppers and jalapeños can both be purchased fresh or in jars. Fresh is the best way to go for most flavor but jars can be found on the pickle aisle of your grocery store. **Freshly grated cheese will work and taste much better than pre-grated bagged cheese but is not required.

    Trudy's Curried Shrimp Recipe

    If you like curry, you'll enjoy the rich flavor of this creamy shrimp mixture that is delicious served over rice. Try this delicious curried shrimp recipe from Palmetto Dunes.

    Serves 4, prep time 15 minutes, cooking time 25 minutes.

    Ingredients:
    2# large raw shrimp, peeled and deveined
    1 green bell pepper (diced)
    1 carrot (diced)
    1 onion (diced)
    1 can coconut milk
    2 tbsp. curry powder
    2 tsp. cooking oil
    Salt, pepper and blackening spice to taste

    Directions:
    In a large saucepan, sauté the vegetables until tender. Add curry powder and stir until fragrant. Add coconut milk and bring to a simmer. Stir in shrimp and cook until shrimp are opaque and firm. Season to taste with salt, pepper and blackening spice. Serve over steamed white rice.

    Big Jim's BBQ Rub

    It's BBQ time at Big Jim's! Are you ready for this Summer's grilling season? We are! Start off summer with this easy grilling dry rub right from Big Jim's. And if you are hungry for some great BBQ and don't want to do any of the work, stop by Big Jim's and try our BBQ ribs.

    Ingredients:
    8 Ounces Paprika
    6 Ounces Granulated Sugar
    4 Ounces Kosher Salt
    3 Ounces Black Pepper
    2 Ounces Oregano
    2 Ounces Thyme

    Directions:
    Combine all ingredients and use as a dry rub for BBQ, seasoning for grilled meats and poultry or as a condiment to season grilled items, sauces and dressings.

    Where to Eat at Hilton Head’s Palmetto Dunes

    Did you know you never even have to leave Palmetto Dunes to satisfy just about any food craving you might have while here on Hilton Head Island? Whether you’re dreaming of shrimp, pizza, fried chicken or BBQ, you can find it all within the resort.

    Here’s a guide to dining at Palmetto Dunes’ many Hilton Head restaurants:

    Big Jim’s BBQ, Burgers and Pizza - Family-friendly Big Jim’s located right on the Robert Trent Jones golf course has a variety of options to please everyone in your group. Choose from seafood, salads, pizzas, burgers, BBQ, nachos and a variety of drink selections for those 21 and older.

    The Dunes House - The Dunes House is the place to be if you’re at the beach. Head up around lunch (or a little before or after to avoid waiting) to this outdoor Hilton Head restaurant (open weather permitting) for some fish tacos, shrimp cocktail, frozen cocktails and more. There’s also a kid-pleasing children’s menu. Did we mention the ocean view?

    Palmetto Dunes General Store - It’ll be hard not to find what you’re in the mood for at this Palmetto Dunes classic landmark. Get there early for fresh-brewed coffee and cinnamon rolls, try their delicious fried chicken at lunch, snack on their plentiful candy and stop by in the evening for ice cream to round out the day.

    Golf Grills - Arthur’s Grill at the Arthur Hills golf course and Fazio Grill at the George Fazio course offer a perfect filler-upper before or after a round of golf. Choose from sandwiches, snack and drinks to eat on or off the course.

    Hilton Head Outfitters - If you need a quick bost after bike riding or spending the day on the lagoon fishing, Outfitters may have just what you need. They carry a selection of energy bars from Clif, as well as some sweet treats like Dippin Dots.

    Alexander’s - For a more upscale dining experience within the resort, try Alexander’s Seafood Restaurant overlooking the lagoon. They offer seafood dishes complemented by an outstanding wine list. Reservations accepted.

    HH Prime, Omni - Got a hankering for a steak? Head over to HH Prime at the Omni Hilton Head Oceanfront Resort, offering the finest aged steaks, fresh seafood and the island’s largest wine selection. Reservations accepted.

    Conroy’s, Marriott - Conroy’s oceanfront restaurant at the Marriott Hilton Head Resort serves classic American fare and seafood, including crab cakes, salmon and shrimp.

    Music, Food and Dancing is Back at Shelter Cove This Spring

    Coming to the island this spring? You’re in luck! You may be here for our seasonal Music & Taste on the Harbour event at Shelter Cove Harbour & Marina.

    Every Thursday evening from April 2-May 21, visitors to Shelter Cove will enjoy live music from local bands, as well as appetizers and drink specials from Shelter Cove restaurants. One of the best parts of the evening is dancing! Everyone joins in around the iconic Neptune Statue as the musicians perform while the sun sets over Broad Creek.

    The event runs from 6-9 p.m., so be sure to stop by before or after dinner at one of our delicious Shelter Cove restaurants, offering everything from Mexican and Italian to Mediterranean and French -- all with a water view.

    If there’s a certain band you’re looking to see, here is the schedule to help you plan your visit:

    • April 2 – Deas Guyz
    • April 9 – Target, the Band
    • April 16 – The Headliners
    • April 23 – Candace Woodson

    There is so much to do when visiting us this spring! For those of you counting down the days until you arrive to gorgeous Hilton Head Island and Palmetto Dunes, we’ve compiled a spring to-do list for you. See how many you can complete and let us know:

    • Snap a selfie with Neptune Statue - Take the bike route under the highway to Shelter Cove Harbour and snap a selfie with the iconic Neptune Statue, the largest figurative sundial in the world!
    • Bike to breakfast - Hop on your bikes one morning and ride to the Palmetto Dunes General Store to snag some sinful cinnamon rolls straight out of the oven along with some freshly brewed coffee
