2# large raw shrimp, peeled and deveined
1 green bell pepper (diced)
1 carrot (diced)
1 onion (diced)
1 can coconut milk
2 tbsp. curry powder
2 tsp. cooking oil
Salt, pepper and blackening spice to taste
In a large saucepan, sauté the vegetables until tender. Add curry powder and stir until fragrant. Add coconut milk and bring to a simmer. Stir in shrimp and cook until shrimp are opaque and firm. Season to taste with salt, pepper and blackening spice. Serve over steamed white rice.
