Trudy's Curried Shrimp Recipe

If you like curry, you'll enjoy the rich flavor of this creamy shrimp mixture that is delicious served over rice. Try this delicious curried shrimp recipe from Palmetto Dunes.

Serves 4, prep time 15 minutes, cooking time 25 minutes.

Ingredients:
2# large raw shrimp, peeled and deveined
1 green bell pepper (diced)
1 carrot (diced)
1 onion (diced)
1 can coconut milk
2 tbsp. curry powder
2 tsp. cooking oil
Salt, pepper and blackening spice to taste

Directions:
In a large saucepan, sauté the vegetables until tender. Add curry powder and stir until fragrant. Add coconut milk and bring to a simmer. Stir in shrimp and cook until shrimp are opaque and firm. Season to taste with salt, pepper and blackening spice. Serve over steamed white rice.
